I’ve been in a post-Passover frenzy to use up leftover potatoes. And since my motto lately is “everything is better with cheese” I came up with this casserole meal. Broccoli added for a modicum of nutritional value.

Put 1lb frozen broccoli florets in a 9 x 13 casserole dish.
Boil peeled potatoes till soft.
Cut the potatoes into large chunks and add to the dish.
Pour 1 cup milk mixed with seasonings* over the potatoes and broccoli.
Cover with shredded cheese and bake at 350 degrees till bubbly.

*For seasonings I used salt, pepper, garlic powder, onion powder, and finely chopped parsley.
