This past week I gave my first shot at making flourless almond cookies.
2.5 cups whole almonds, shelled blanched and peeled
1 cup sugar syrup*
2 medium egg whites
Process the almonds in a food processor until chopped as fine as possible. Add sugar syrup and egg white and process until well combined. Drop batter by tablespoons onto cookie sheet and bake for 18 minutes at 350 degrees or until lightly browned.
They were pretty good, but very gooey. I probably could have gotten away with using half as much sugar syrup.
*Sugar syrup – dissolve 4 cups sugar in 2 cups boiling water, let cook for an additional 5 minutes then cool.
