Cook 2 chicken leg quarters, along with 3 cloves crushed garlic, in a pot of boiling water for at least 1/2 an hour. Remove chicken.
Add diced onion, sliced carrots, dried oregano, chopped up mushrooms, and rinsed barley (always rinse the barley!) and cook for 45 minutes to 1 hr. Add in shredded chicken meat, salt and pepper to taste, and eat.
