If you are in the US of A and celebrating Labor Day today, chances are you are either hosting or heading out to a BBQ. In our house, no BBQ is complete without guacamole. Either we eat it with tortilla chips, slather it on our burgers, or use it to top a fajita taco. These are the three types of guacamole you are likely to see at my house:

1. Simple – Mash ripe avocado. Add salt to taste.
2. Tasty & Speedy – Mash ripe avocado. Mix in some of your favorite jarred salsa.
3. Fresh & Yummy – Mash ripe avocado. Mix in diced tomato and very very very finely chopped red onion. You can add in some chopped cilantro if you’d like. Mix in some lemon or lime juice and salt to taste.

Old wives’ tales abound of ways to keep avocado from turning brown. The bottom line is minimize exposure to air. Prepare the avocado right before you’re going to eat it. If you must make it ahead of time, put it in a bowl and smoosh a layer of saran wrap right onto the surface.
