So here’s what I made for supper the other night.
The chicken patties are made with ground dark meat chicken. I added in a little toasted sesame oil and onion powder for flavor. Mix it all together, make little patties, and cook them in a non-stick skillet over medium high heat. I used cooking spray rather than oil in the pan, and I let the pan get hot before adding the patties so that I’d get a nice crisp sear on the outside.
The rice mixture is made up of brown rice, cherry tomatoes cut into 1/8ths, and diced avocado all stirred together. I added in some chopped up fresh cilantro and finished off with a squeeze of lime juice and some salt.
